That is why it can droop while the rest of the bouquet still looks fresh. If it happens, it is usually reversible: recut the stem on a sharp diagonal and stand the whole head in cool water for twenty to thirty minutes. Most heads lift again. Keeping the vase topped up and out of the air-conditioning draught prevents it in the first place.
